1. If you are going to deep fry Sabudana Vada, Pakora, Puri in any oil, then the first rule for deep frying is to use the smallest burner of the gas stove. If you make it bigger, whatever you fry may burn.
2. If you have a small pan then use it only. Also, the pan should be completely dry, there should not be any water in it. Now add oil in it.
3. When you put oil in the pan, keep it there and do not leave it on high flame. Due to this, smoke will start rising from the oil. Smoke should not rise from the oil at all. Due to this the nutrients of the oil are lost. Oil burns and putting anything in oil heated on high flame can burn it completely.
4. To check whether the oil is heated properly or not, first put a small amount of the material and check whether it has sunk inside the oil. If so, it means that the oil has not been heated properly. When heated the material remains above the oil.
5. Be it sabudana vada or pakoda, when you add it to the oil, reduce the flame. By deep frying on high flame, things will look cooked and crispy on the outside, but will remain raw from inside. It is better if you deep fry anything, try to cook it by turning it on low flame. This will maintain the taste in the food also.
